Oh mama this salad is good. And it is cheating. I love cheat food that is healthy. It can’t get much better.
There is quite literally no cooking involved in this, simply open a few packets, whack them in a bowl and you’re good to go. There really is no excuse for eating a microwave meal when there are alternatives like this.
Buy a little tub of ready-cooked flaked trout and a prepared salad of edamame beans. I got this one from Asda which comes with an amazing soy, chilli and garlic dressing, but to be honest I’m sure you could easily recreate that at home yourself. (And you could make a gluten-free version by using tamari instead of soy sauce).
Line your plate or bowl with a handful of spinach leaves. Mix the edamame beans with the dressing and pour the beans and trout over the spinach bed. Then sprinkle some pomegranate seeds over the top.
And that’s it. That is literally it.
An amazing, fresh, super fast summer salad. Boom!
